Sweet Potato, Feta, and Quinoa fritters

Ingredients

2 cups roasted sweet potato
125 grams Barambah Organics Feta cheese (crumbled)
2 cups cooked quinoa
1/2 cup self raising flour
2 eggs
1 tsp salt
Pinch ground pepper
1 tsp cumin
2 tbps fresh coriander
1 tsp ground coriander
1 tsp onion powder
1 tsp minced garlic
1/2 tsp chilli powder (optional)
1/2 cup fine breadcrumbs
Panko breadcrumbs and additional crumbled Barambah Organics Feta cheese for crumbing
Olive oil

Method

  1. Prick sweet potato with a fork and bake in oven on tray lined with baking paper.
  2. Scoop 2 cups of sweet potato from peel and place in bowl with 2 cups cooked quinoa.
  3. Add Barambah Organics Feta Cheese, flour, eggs, fine breadcrumbs, herbs and spices to sweet potato and quinoa mixture. Mix well.
  4. Separate mixture into 8 equal parts and form into fritters.
  5. Combine panko breadcrumbs with crumbled Barambah Organics Feta Cheese and use to coat fritters.
  6. Heat olive oil over medium heat, and shallow fry fritters until golden and crispy.

Serving options:

  • With whipped feta and salad.
  • As patties for a veggie burger.
  • Smaller fritters as an appetiser or side dish.
  • Topped with poached egg and relish for brunch.
