2 1/2 cups Barambah Organics Skim milk
1/3 cup medium grain rice
2 egg yolks
1/4 cup raw sugar or monkfruit sweetener
1 cinnamon stick
1 vanilla bean (split, seeds scraped)
1/4 tsp nutmeg
1/4 cup sultanas (optional)
Topping:
1 tbsp raw sugar & 1 tsp cinnamon (combined)
Notes: Substitutes include Vanilla bean substituted for 1 tsp vanilla extract and cinnamon stick substituted for 1/2 tsp ground cinnamon.
